Valentine's Day 2016

Today is Valentine's Day so i decided  I would cook a lovely roast lamb lunch.  This is a real treat as the only lamb you can find easily in the town where we stay is either boneless lamb roast or a leg of lamb roast.  The leg is really good but unfortunately doesn't fit into my small convection oven.

I am serving the lamb with roast potatoes and mom has kindly said she will make cauliflower and a cheese sauce. All I can say is I am sure that it will be yummy.

The lamb we get here is imported from New Zealand.  Honestly very good but definitely not the same as the lamb we get in South Africa. I have rubbed the lamb with salt, pepper, Aromat and thyme.  I have put it in an oven dish and covered it in foil. I popped it in the oven at 160 degrees Celsius. Once the lamb has cooked halfway I am going to put the potatoes in the oven with the lamb.  I will be covering them with olive oil, salt and pepper.  We are truly big fans of roast potatoes.

My Fiance' Ivan bought me a beautiful ring for Valentine's Day (although he gave it to me early).  He proposed 4 years ago.  I do still have my ring but he wanted to replace it because when it got damaged and then repaired, it wasnt quite the same.  He wanted to buy a new one. So he re-proposed and naturally I said yes again.

All in all our lunch was yummy!

Me early Valentine's Day gift!

I hope that everyone had an amazing Valentine's Day

Remember you are in charge of your own happiness, we live in an extraordinary world! Enjoy it! Make the most of it.
